  • 250g pasta (any type)
  • 200g pitted black olives
  • 150g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 100g fresh spinach or arugula
  • 100g feta cheese, diced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • Salt and freshly ground black pepper to taste


  1. Cook the pasta in boiling salted water according to the package instructions. Drain in a colander, rinse with cold water, and let it cool completely.
  2. In a large bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper. This will be your black sauce.
  3. Add the cooled pasta to the bowl along with black olives, cherry tomatoes, onion, and fresh spinach or arugula. Mix well to ensure all ingredients are evenly coated with the sauce.
  4. Sprinkle the salad with diced feta cheese before serving. You can also add some fresh basil or parsley for garnish.
